Lavender Oatmeal Chocolate Chip Cookies

½ cup real butter, softened
½ cup brown sugar
2 Tablespoons Lavender flower (3-4 Tbsp. fresh flowers)
1 large egg
2 Tablespoons milk
1 teaspoon vanilla extract (real)
1 cup oatmeal
¾ cup chickpea flour (Besan)
¾ cup barley flour
¾ teaspoons baking powder
1 generous cup semi sweet or dark chocolate chips

Preheat the oven to 350 degrees F 

1.      Blend butter, sugar & Lavender until smooth. Add egg, milk & vanilla in next.

2.       Blend oatmeal, flour, and baking powder together; add in your chocolate chips to this dry mix.

3.      Blend both mixes together to form soft dough.

4.      Place by teaspoons onto baking tray.

5.      Dip your fingers in water so the dough won’t stick and press it down until it’s thin and the desired cookie shape. 

6.      Bake 10 minutes.  Let cool.

 

Note:  If you would like to use another flour choice it’s 1 ½ Cups Flour.

Variations: Add 3 or 4 pieces of crystallized ginger finely chopped or Zest of one orange or 1 cup nuts, raisins, and coconut or dried sweetened cranberries.
For a Chocolate dough base: Add ½ cup of cocoa powder in with flour & sugar and decrease the chocolate chip amount slightly.

 

Gluten Free

1/2 cup chickpea flour (Besan)
1/4 cup Buckwheat flour
1/4 cup Cornstarch
1/2 cup Brown Rice Flour
1 teaspoon Guar Gum
¾ teaspoons baking powder Gluten Free certified
1 generous cup semi sweet or dark chocolate chips
